Colcannon is a traditional Irish dish containing tender potatoes and cabbage. We especially love how little ingredients are needed to complete this wholesome meal.

  • 1 medium cabbage
  • 3 lb. potatoes, yukon gold or red potatoes are best
  • 2 leeks
  • 1 C. milk
  • 1/8 tsp. ground mace
  • 1/2 C. butter
  • Salt and pepper to taste

In a large saucepan, boil cabbage until tender. Remove and chop into small pieces. Set aside and keep warm. Boil potatoes until tender. Remove from heat. Drain and peel off skins. Chop leeks and simmer them in milk to cover until soft. Season potatoes with salt, pepper, butter and mace. Mash potatoes well. Stir in cooked leeks and milk. Blend in cabbage and heat until hot. Top with a little more butter and serve.
