  • 3 lbs peeled potatoes
  • 1 large quartered onion
  • 3 beaten eggs
  • 1/2 cup flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 tablespoon parsley

Shred potatoes and onion in food processor fit with medium blade, then dry between sheets of paper towel. Combine potato mixture with eggs, flour, baking powder, parsley and salt in a large bowl. Heat a large skillet with 1/8 vegetable oil until hot, then pour in 1/3 cup potato mixture and flatten it with a wooden spoon. Fry until crisp and golden brown on both sides, about 3 minutes per side. Serve with sour cream, chives, or applesauce.
