  • 1 large zucchini, washed, trimmed, sliced into chips
  • 1 C. olive oil
  • 1/2 T. salt
  • 8 oz. bottled soda water
  • 1/2 tsp. sea salt
  • 3/4 C. all-purpose flour

In a large skillet, heat olive oil on high. Place zucchini chips in a bowl with salt and let sit. In a large bowl, combine soda water, flour, and salt. Whisk slowly until batter thickens. Using a fork, coat the zucchini chips in the batter and place in the skillet. Fry for 5 minutes, until golden brown on both sides. Let drain on paper towel and serve.
