  • 2 tsp. salt
  • 1 tsp. ground black pepper
  • 1 tsp. dried thyme leaves
  • 3 garlic cloves, crushed
  • 2 Tbs. fresh lemon juice
  • 3 1/2 lb. boneless lamb

Mix all ingredients except lemon juice in blender until finely ground. Combine garlic mix and lemon juice in bowl. Rub spices over both sides of lamb. Place spice lamb on rack and cook for 25 to 30 minutes or until a thermometer reaches 140 degrees F. Allow meat to rest for 15 minutes before cutting it in slices.
