  • 4 to 6 large, ripe, tomatoes
  • 1 large red onion, cut in fine wedges
  • 1 cucumber unpeeled, cut in rounds
  • 1 green bell pepper
  • 1 tsp. dried oregano
  • 1/4 pound of Greek feta cheese, crumbled or sliced
  • Salt to taste
  • 2 to 3 Tbsp. olive oil
  • 15 to 20 black olives

Wash the vegetables and dry them. Cut the tomatoes into chunks and remove the core. Salt it and the cucumber lightly. Slice the bell pepper into rings and remove the stem and seeds. Salt it lightly. Combine the tomatoes, cucumber, bell pepper, and onions in a bowl. Sprinkle it with oregano. Pour the olive oil over the salad and toss. Right before serving, put the feta on top of the salad and toss in the olives.
