  • 1/2 C. butter, softened
  • 3/4 C. dark brown sugar, packed
  • 1/3 C. molasses
  • 1 egg
  • 2 Tbs. water
  • 2 2/3 C. flour
  • 2 tsp. ground ginger
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 tsp. ground cinnamon
  • 1/2 tsp. ground nutmeg
  • 1/2 tsp. allspice

Cream together the butter and brown sugar in a large bowl until the mixture is light and fluffy. Beat in the molasses, egg, and water. In a second bowl, combine the flour, ginger, baking soda, salt, cinnamon, nutmeg, and allspice. Add the dry ingredients to the wet and mix well. Divide the dough in half, cover, and refrigerate for 30 minutes, or until easy to handle.

Preheat the oven to 350 degrees. Lightly flour a clean, flat surface and roll out the dough to 1/8-in. thickness. Cut the dough with cookie cutter of your choice. Place the cookies 2 in. apart on greased sheets. Repeat with the remaining dough. Bake each tray for 8 to 10 minutes, or until the edges of the cookies are firm. Remove the cookies from the tray and cool on a wire rack.
