  • 1 C. milk, fresh
  • 1/2 C. flour, all purpose
  • 5 C. Potatoes, cooked and mashed
  • 2 tbsp. butter
  • 1/2 C. oil, for frying
  • 1/4 C. onion, chopped
  • 2 eggs, beaten
  • 1/4 tsp. pepper, black
  • 1/2 tsp. salt

Start off by mixing the eggs with milk then add the flour as you continue to mix properly. Add in onions, pepper and salt to the mixture and continue to stir. Incorporate the smashed potatoes into the mixture for a perfect blend.

Heat some oil into a frying pan until hot and then scoop desirable portions of the potato mixture to the pan. Flatten the potato pancakes as you add butter into the pan. This should be left to cook for four minutes or until golden brown before flipping the other side and left to turn brown as well. Serve and enjoy your meal.
