Here is a kid-friendly stew that everybody will love. The Hungarian classic served with fresh slices of bread will be wonderful!

  • 1 lb. pasta, macaroni or corkscrews
  • 1 C. onion, diced and frozen
  • 3 cloves garlic, minced
  • 1 C. green pepper, diced and frozen
  • 1 (12-oz.) soy crumbles
  • 2 C. frozen corn
  • 1 (28-oz.) can diced tomatoes
  • 1 (15-oz.) can kidney beans, drained and rinsed
  • 2 C. tomato sauce
  • 1 tsp. cumin
  • 1 Tbs. Hungarian paprika
  • Salt and pepper to taste

Bring a large pot of water to boil and cook pasta according to directions. Sauté onion and garlic in a large pot for 3 minutes on medium heat. Add in the pepper and cook for another minute or two. Add in the soy crumbles and corn and cook for about 10 minutes. Now stir in the tomatoes, beans, tomato sauce, cumin and paprika. Continue to cook over medium heat. Drain pasta and add it to the saucy pot. Stir to coat well. Let it sit for a couple minutes for flavors to combine. Season with salt and pepper to taste.
