Traditional Neapolitan Marinara Sauce
Ingredients
- 2 Tbs. olive oil
- 3-4 cloves fresh garlic
- 2-4 fresh basil leaves
- pinch of black pepper
- 1 lg. can whole Italian style tomatoes crushed by hand
- Variations:
- Half a small chopped onion
- Pinch of oregano for pizza or seafood
Directions
Saute chopped or minced garlic in olive oil until translucent then add whole tomatoes and black pepper. Bring to a boil on medium high heat.
Reduce heat add basil, cover and simmer for 45 minutes to an hour stirring regularly. Remove from heat and let stand for five to ten minutes. Reheat sauce when serving if neccesary.
Important: when using oregano for pizza sauce or seafood recipes, be sure not to add oregano until last few minutes or oregano will become bitter.
If using onions, saute with garlic at beginning(not recommended for pizza sauces).
