  • 4 lb. pork butt, cooked and shredded
  • 1 C. apricot jelly
  • 1/4 C. dijon mustard
  • 1/4 C. fresh orange juice
  • 2 Tbs. fresh lime juice
  • 16 corn tortillas, warmed
  • 3/4 C. mayonnaise
  • 1 ripe Avocado, pitted and sliced
  • Juice of 1/2 Lime
  • 1/4 C. fresh orange juice
  • 2 Tbs. honey
  • 1 Tbs. granulated sugar
  • 1/2 small red onion, chopped
  • 1 can corn
  • Salt and pepper to taste

Place pulled pork in a large saucepan. Whisk together the apricot jelly, mustard, orange and lime juices in a bowl, then season with salt and pepper. Add to pulled pork and heat over low heat. Bring to a simmer, stirring occasionally. Whisk the mayonnaise, chipotles in adobo, avocado and fresh lime juice together until smooth. Whisk together the orange juice, lime juice, honey and sugar in a large bowl. Add the onions, cabbage, carrots and cilantro, then season with salt and pepper. Lay the warm tortillas on a flat surface. Spread a layer of blended mayonnaise on each one. Fill the center with pork and steamed brown rice.
