  • 12 lb. turkey
  • kosher salt and freshly ground black pepper
  • 1 onion, roughly chopped
  • 3 ribs celery, roughly chopped
  • 8 T. unsalted butter
  • 1 tsp. dried thyme
  • 1 tsp. sage
  • 4 dried bay leaves, crumbled

Preheat your oven to 350°F. Generously season the entire turkey, cavity included, with salt and pepper. Stuff with onions and celery. Using kitchen twine, tie the legs of the turkey together and tuck the wings under the body. Transfer to an 18x26-inch sheet of aluminum foil and top with an equally sized sheet of foil. Seal the edges tightly, forming a packet around the turkey. Place in a large pan and roast for two and a half hours. In a medium saucepan, melt butter with remaining ingredients. Remove the top sheet of foil and baste the turkey with your butter-herb mixture. Increase oven to 500°F and baste the turkey every five minutes until a meat thermometer registers 165°F. Let stand for 15 minutes before carving.
