  • 4 kielbasa sausage, sliced
  • 2 smoked sausages, diced
  • 1 lb. sauerkraut
  • 1 C. ham, diced
  • 1 C. veal sausage, diced
  • 4 pickled cucumbers, diced
  • 2 Tbs. tomato paste
  • 1 bell pepper, diced
  • 1 onion, diced
  • 1 large carrot, shredded
  • 2 bay leaves
  • Salt and pepper
  • Olive oil
  • Parsley and dill for garnish

Give the sauerkraut a rinse and heat a pot with the olive oil. Add the sauerkraut to the pot and cook for 30 minutes until it’s tender. In a pot, saute the veggies until they’re tender. Add the sausages and saute for about 10 minutes. Add about 3 cups of water and the tomato paste and boil. Bring it down to a simmer for 20 minutes. Use the juice from the meat and veggies and boil the sauerkraut. Add the sausage and veggies into the sauerkraut and add 3 more cups of water (maybe more depending on your taste). Season the soup with salt and pepper. Let it simmer for another 15 minutes.
