  • 3 large potatoes, peeled and quartered
  • 1 stick butter, divided
  • 1 medium onion, chopped
  • 1/2 C. diced carrots
  • 1/4 C. corn
  • 1/4 C. peas
  • 1 1/2 lbs. ground round beef
  • 1/2 C. beef broth
  • 1 tsp. Worcestershire sauce
  • Salt to taste
  • Pepper to taste

Place potatoes in a medium-sized pot. Cover with an inch of cold water and add a pinch of salt. Bring to a boil. Reduce to a simmer and cook for 20 minutes.

Meanwhile, melt 1/2 stick of butter in a large pan over medium heat. Add onions and carrots and cook for 6 minutes. Add peas and corn and saute for an additional 2 minutes. Add ground beef, Worcestershire sauce and broth to the pan with onions and vegetables. Season with salt and pepper. Cover and cook for 10 minutes.

When potatoes are done, remove from pot and place in a bowl with remaining 1/2 stick of butter. Mash with a potato masher or fork. Preheat oven to 400 degrees.

Layer beef, onions and vegetable in a large baking dish. Add mashed potatoes on top. Bake for 30 minutes. Serve.
