  • 1 (15 oz.) can baked beans
  • 1 clove of garlic, minced
  • 2 Tbs. hot sauce
  • 1 Tbs. red pepper flakes
  • 2 tsp. oil
  • 2 large eggs
  • Pepper
  • 2 (8-inch) flour tortillas
  • 1 avocado
  • 1 large red onion, halved and sliced
  • 1 C. cilantro
  • ½ C. feta cheese, crumbled

Add beans, garlic, hot sauce and red pepper flakes to a small skillet and heat over low heat. Simmer for 5-8 minutes. In another skillet, heat oil. Fry both eggs sunny-side up until egg white is firm. Season with a pinch of pepper.

Place each tortilla on a plate. Coat each tortilla with the beans until it covers the entire tortilla. Place fried egg in the center. Place avocado slices, onion slices, cilantro and feta cheese around the tortilla. Serve.
