  • 1 dozen large eggs
  • 1/2 a cup of mayonnaise
  • 2 tablespoons of chopped fresh chives
  • 2 tablespoons of yellow mustard
  • Salt and ground black pepper

  • 10 slices white country bread

Directions

First, in a large stockpot, cover the eggs with water so they are completely covered. Bring the water to a boil. Then, turn off the heat, cover the pot and let the eggs cook in the water for 20 minutes. Then pour out the hot water and carefully submerge the eggs in cold water. Let the eggs sit for 5 minutes. After, remove them front the water and crack and peel the eggs. Refrigerate them until they are cold.
Once the eggs are cold, finely chop the boiled eggs. Add them to a large bowl. Add the mayonnaise, chives, mustard, salt and pepper and mix until everything is blended well. Spread the egg mixture on the bread and make the sandwiches. Cut each sandwich into triangle shapes.
