  • 2 ¾ cups flour
  • 1 cup quick oats
  • 3 ½ cups white sugar
  • ¼ teaspoon salt
  • 1 ½ cups butter
  • 1 cup sour cream
  • 4 eggs
  • 1 teaspoon vanilla extract
  • ½ cup raspberries
  • 1 cup strawberries
  • ½ cup blueberries

Preheat the oven to 350 degrees and grease a baking pan. Blend the oats in a food processor and then add 2 cups flour and 1 ½ cups sugar and salt. Pulse 3 times. Cut the butter into smaller pieces and add the butter to the processor. Blend for 1 minute. Set aside 1 ½ cups of the mixture. Press the rest of the mix into the pan and bake for 15 minutes. Meanwhile, in a large bowl, whisk the eggs. Add the sugar, sour cream, remaining flour, a pinch of salt, and vanilla. Mix well. Fold in the berries and then spoon the mix over the baked crust. Sprinkle the reserved flour mix over the fruit filing and bake for 45 minutes. Let the bars cool before cutting and serving.
