  • 2 whole chicken breasts, skinned, boned, halved, and flattened
  • 2 slices ham
  • 1 fresh, ripe mango
  • 1/2 C. flour
  • 1/2 tsp. thyme
  • 1/8 tsp. curry
  • 2 eggs
  • 1/2 C. milk
  • 1 C. unsweetened, grated coconut
  • 2 tsp. butter
  • 2 tsp. olive oil
  • 4 lg. wooden toothpicks

In a bowl, mix thyme, curry and flour. In another bowl, beat eggs and milk.  Place coconut on a flat plate.  Oil an oven-proof casserole dish.  On a flat surface, lay out chicken breasts.  Top with ham.  Place mango in center. Roll like jelly rolls and secure with toothpicks.  Dredge chicken in flour mixture, then egg mixture. Roll in coconut to coat completely.  Put chicken roll in casserole dish and dot with butter.  Bake in a preheated 400-degree oven for 20 minutes.  Remove chicken from casserole to heated plates. Remove toothpicks.
