Ingredients

  • 8 boneless chicken breasts
  • 2 cups flour
  • 2 tsp ground sea salt
  • 2 tsp garlic salt
  • 1 tsp ground nutmeg
  • 3/4 cup (1.5 sticks) butter
  • 2 ½ cups pineapple juice
  • 1 tbsp plus 3 tsp soy sauce
  • 1/3 cup granulated sugar
  • 8 brioche buns
  • To Garnish:
  • ½ cup guacamole
  • 8 slices cooked bacon
  • 1 tomato sliced
  • ½ cup romaine lettuce

First things first, preheat your oven to 350 F
Next, mix your chicken seasonings. In a small mixing bowl, combine flour, sea salt, garlic powder, and nutmeg.
Dip your chicken breasts in your seasoning-flour mixture. Be sure to coat thoroughly.
Once your chicken is seasoned, melt your butter in a skillet over medium heat. Then, cook your chicken breasts and fry until both sides are a nice golden brown.
Once your chicken is cooked, you should remove the chicken from heat and place it in a sturdy baking dish.
In a second mixing bowl, you can now mix your pineapple juice, soy sauce, and granulated sugar. Once these ingredients are thoroughly combined-- sugar dissolved into liquid ingredients-- pour the marinade over your chicken.
Cover your baking dish with tin foil and then bake for about 20 minutes, basting every few minutes. Before removing from heat, be sure the internal temperature is no less than 165 F.
Place each breast onto its own brioche bun. Garnish with guacamole, bacon, lettuce and sliced tomato.
If you’d like a sweet sauce to add to your slider, feel free to pour your leftover baking juices into a saucepan and allow it to simmer. Combine it with some cornstarch or flour to thicken.
