This is perfect for a Hawaiian luau dinner party!

Ingredients

  • 6 boneless, skinless chicken breast halves
  • one 15-oz. can pineapple slices, juice reserved
  • 1/3 C. packed brown sugar
  • 2 Tbs. lemon juice
  • 1/4 tsp. ground ginger
  • 1/4 C. cornstarch

Directions

Place chicken breast in a slow cooker sprayed with vegetable cooking spray.  Sprinkle with a little salt. Place pineapple slices over chicken.  In a small bowl, combine pineapple juice, brown sugar, lemon juice, ginger, and cornstarch. Stir until cornstarch mixes with liquids.  Pour over chicken breasts.  Cover and cook on low for 4-5 hours.  Serve over rice.
