Regular fruit salad can't hold a candle to this tropical fruit salad with all its exotic fruits. While this recipe does call for some interesting ingredients, you can substitute most of the fruit for more easily found options, if you need to. This is particularly tasty when served over vanilla ice cream on a hot summer day.

  • 2 C. pineapple, chopped
  • 2 bananas, sliced
  • 1 C. lychee, chopped
  • 1 dragon fruit, peeled and chopped
  • 1 orange, peeled and chopped
  • 1 C. grapes, halved
  • 1 kiwi, peeled and sliced
  • 1 C. pomegranate seeds
  • 1 mango, peeled and chopped
  • 2 Tbs. shaved coconut
  • 1 Tbs. pineapple juice
  • 2 Tbs. orange juice
  • 1/4 C. mint leaves, minced

Mix the orange juice, pineapple juice and mint leaves in a small bowl
Muddle the leaves a little to release some of the flavor into the juice
In a larger bowl, toss the remaining ingredients
Add the juice mixture and mix well
Let the salad chill and marinate overnight
Before serving, stir the salad again to distribute the juices that have collected during the night
