Tropical Island Caramelized Pineapple Salsa

  • 4 C. fresh pineapple, cut into one inch chunks
  • 1/3 C. brown sugar
  • 1 (4 ounce jar) roasted red peppers
  • 1/2 C. thinly sliced red onion
  • 1 Serrano pepper, minced
  • 1/2 C. chopped cilantro
  • 1/2 tsp. sea salt
  • 6 drops Tabasco
  • 2 Tbs. red wine vinegar
  • juice of 1/2 lemon
  • juice of one lime

Preheat broiler. Line heavy baking sheet with foil. Place pineapple on baking sheet. Sprinkle with brown sugar. Broil until browned and bubbly. Remove fro oven and let cool. Combine all ingredients in medium bowl. Season with additional salt if necessary. Serve with tortilla chips.
