Tropical Mango and Avocado Salad

- 1 Large Avocado, peeled and cubed
- 1 Large Lime, for juices
- 2 Tbs. Olive Oil
- Sea Salt, to taste
- Ground Black Pepper, to taste
- 1 Large Mango, peeled and cubed
- 1 1/2 C. Spring Mix Salad
- 1/2 C. Chopped Walnuts
- 1/3 C. Feta Cheese, crumbled
Place the avocado into a medium-sized bowl. Roll the lime to release the juices before cutting it in half and squeezing the juices out onto the avocado cubes. Drizzle the avocado with olive oil. Season with salt and pepper. Gently toss avocado pieces to coat. Add mango and gently stir.
Place the spring mix salad into another medium-sized bowl. Pour the mango and avocado mixture over the salad, and stir to incorporate the dressing throughout. Sprinkle with chopped walnuts and feta cheese before serving.
