  • 1 tsp. cinnamon
  • 2 eggs
  • 2 C. flour
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 2/3 C. sugar
  • 1/3 C. oil
  • cool whip, for topping
  • mixed berries, for topping

Preheat the oven to 350 degrees. In a bowl, mix the mango, oil, and spices in a bowl. Beat in the eggs one at a time. In a second bowl, mix together the dry ingredients. Pour the dry ingredients into the mango mixture and beat until well combined. Pour the batter into a 9-in. round cake pan. Bake for 25 to 30 minutes, or until baked through. Cool completely, then top with cool whip and fresh berries.
