Directions

Combine pineapple and sliced red pepper in a saute pan. Cook over medium heat until soft. Season tilapia with Old Bay (or similar seafood seasoning) - only lightly. Cook on the stove top or on the grill just until fish flakes.

Divide spinach over plates/bowls. Top with pineapple and pepper mixture. Let stand a few moments to allow the pineapple and bell pepper mixture to wilt the spinach. Add the tilapia. While pineapple pepper mixture is wilting spinach, cook white rice according to directions. Once prepared, add chopped scallions and let stand a few moments to blend flavors. Serve with finished tilapia.

  • Great cooked on the grill.
Used purple onions and cooked in real butter.
    Added a touch of jalopeanos.
Will fix again. Orange roughy with lemon pepper.
Placed fresh lemon juice over fish prior to
    seasoning.

  • This is great even in cold weather. I have to use canned pineapple most of the time though, cause fresh is sometimes too much for just one or two folks.

  • I wasn't sure if my husband would like fish made this way. He didn't like it; he LOVED it. He's a diabetic and finding new and different recipes, rather than the same-old, same-old recipes for fish, isn't an easy job for me. We will be eating this recipe at least once a week from now on. Thanks for taking the time to submit this recipe to recipe4living.
