Ingredients

  • 1¾ cup Water
  • ¾ cup Frozen Premixed Pineapple & Orange Juice, not concentrated
  • 1 cup Uncooked White Long Grain Rice
  • 2 Tbsp Vegetable Oil
  • 1 Pkg Tofu
  • Seasoned Pepper
  • ⅓ cup Chopped Onion
  • ½ cup Sour Cream
  • ½ cup Salsa
  • 2 Tbsp Snipped Fresh Parsley

Directions

Boil water, pineapple and orange juice. Add uncooked rice and reduce heat, simmer covered 10 min. Chop tofu into chunks, then brown in vegetable oil in separate skillet. Add chopped onion and parsley. Combine tofu with sour cream and salsa, blending well. Pour mixture into casserole dish, layering with rice. Place in oven and bake at 350 degrees for 20 min.
