Avocados are chalked full of healthy oils and fats that are essential for hair and skin cell production. These tuna and tomato stuffed avocados are filling enough to be a meal on their own and are low carb.

  • 1 Can tuna (in water)
  • 1 T. olive oil
  • 2 avocados
  • ½ C. fresh cilantro
  • ¼ C. red onion
  • ½ lime juiced
  • ½ lime zest
  • 1 C. cherry tomatoes (cut in fourths)
  • ½ tsp. Salt
  • ½ tsp. Pepper
  • 1T. Chia seeds

Leaving the skin on cut the avocados in half and remove the seeds. Set aside.

In a small bowl mix drained tuna, olive oil, fresh cilantro, red onion (julienned), lime juice and zest, tomatoes, and salt and pepper.

Distribute the tuna equally in the avocado seed well. Garnish with chia seeds.
