  • 2 cans tuna
  • 2 cans drained and rinsed white beans
  • 1/3 cup capers
  • 1 cup cherry tomatoes
  • 4 basil leaves
  • 2 ½ cups arugula
  • 1 sliced red onion
  • 6 tablespoons red wine vinegar
  • Salt and pepper

Pour the canned tuna into a large bowl and reserve the olive oil from the cans in another small bowl. Use your fork to break the tuna into smaller pieces before adding the capers and beans to the bowl. Pour the red wine vinegar into the bowl of reserved olive oil and season the bowl with salt and pepper. Then pour the dressing over the tuna bowl. Add the onion and tomatoes and toss to combine the ingredients. Serve the tuna and white bean salad over the arugula and top the tuna with basil leaves.
