These gyro sandwiches are made with mini pitas and stuffed with gyro tuna salad and a great Greek salad lettuce mix! The little sandwiches are perfect to pack for school lunches.

  • 6 pita pockets
  • 1 tablespoon lemon juice
  • 2 tablespoons olive oil
  • ½ cup crumbled feta cheese
  • 2 cans drained tuna
  • lettuce
  • ½ cup plain yogurt
  • 1 chopped stalk celery
  • 1 diced tomato
  • 1 chopped cucumber
  • 1 chopped clove garlic
  • Salt and pepper

Mix the yogurt, celery, and tuna in a bowl to make the tuna salad. Season with salt and pepper. In a separate bowl, mix the lemon juice, oil, garlic, and a pinch of salt. Toss this dressing with the cucumber, tomato, cheese, and lettuce. Divide the lettuce salad evenly between the pita pockets and top with gyro tuna salad.
