Ingredients

  • 1/3 lb. spaghetti
  • 1/4 C. butter
  • 1 med. onion, sliced
  • 6 Tbs. flour
  • 1/2 tsp. prepared mustard
  • salt
  • pepper
  • 1 3/4 C. milk
  • 7 oz. canned tuna, drained and flaked
  • 3/4 C. grated cheese
  • 3 slices lean bacon
  • 8 green olives, halved

Directions

Cook the spaghetti in boiling, salted water for 10 minutes or until tender. Drain and rinse in hot water. Heat the butter in a pan and cook the onion until soft but not colored. Stir in the flour, mustard, seasoning and cook for 1 minute. Add the milk and stir until smooth and thickened. Divide the sauce in two and add the tuna to one half. Lightly oil a skillet and place half the spaghetti in it. Spread on the tuna sauce. Cover with the rest of the spaghetti, top with the remaining sauce and sprinkle the grated cheese. Stretch the bacon slices with a knife and cut them in half lengthwise. Arrange the bacon pieces on the top of the mixture in a lattice pattern. Place the pan under the broiler until bacon is crisp and brown. Garnish with the halves onions immediately.

Serve with: Salad of Peppers
