Tuna Salad

This is a quick, light, but filling meal. Perfect for a hot summer day!

Ingredients

  • 1 7-oz. can tuna
  • 1-2 stalks celery, diced
  • 2 C. three bean salad
  • 1 sweet pepper (yellow or red), chopped
  • 2-3 stalks green onion, chopped
  • 1 lg. tomato, chopped
  • 1/4 C. shredded cheese your choice (optional)
  • 2 hard boiled eggs (optional)
  • 1 C. shredded green lettuce or mixed greens
  • garlic bread

Directions

Fix the salad plates individually. Spread on each plate a bed of the shredded lettuce. Flake tuna and divide on each plate. Add all of the above ingredients you wish to include on each salad plate. Add your favorite salad dressing, and serve with warm garlic bread. Perfect for a hot summer day!
