  • 6 eggs
  • 1 1/2 C. stuffing, cooked
  • 1/2 C. shredded mozzarella cheese, low-fat
  • 1/4 C. skim milk
  • 6 slices turkey bacon
  • salt
  • pepper

Preheat oven to 350°F. Spray a 12-cup muffin tin with nonstick spray and set aside. In a medium skillet, cook turkey bacon until crisp. Drain on a paper towel, cool, and crumble into small pieces. Set aside. In a medium bowl, whisk together eggs, milk, salt, and pepper. Set aside. Spoon 2 T. of stuffing into each muffin cup, pressing down to create a crust. Pour egg mixture into each muffin cup, covering stuffing. Sprinkle bacon pieces and cheese on top of each muffin cup. Bake for 10 to 12 minutes until eggs are set. Cool before serving.
