Turkey Cranberry Bagels

This is an easy sandwich to throw together with a refreshing cranberry mayonnaise spread. A great way to use up leftover turkey!

  • Spread:
  • 1/2 C. chopped celery
  • 1/2 C. chopped dried cranberries or cherries
  • 1/3 C. low fat mayonnaise
  • 1 Tbs. Dijon-style mustard
  • Sandwich:
  • 4 bagels, split
  • 1/2 lb. smoked turkey breast
  • 4 slices Swiss, Provolone or Monterey Jack cheese Lettuce

Stir together the spread ingredients in small bowl. Cover and refrigerate at least 1 hour. To make sandwiches, divide spread among the bottom bagel halves. On the top of the spread, layer

1/4 of the turkey, 1 slice cheese, 1 or 2 lettuce leaves. Top with the other bagel half and serve.

Yield: 4 sandwiches
