Turkey Curry
Ingredients
- 1 C. sliced sautéed fresh (or canned and drained) mushrooms
- 1/3 C. minced onion
- 1 large apple, peeled, cored, and diced
- 3 C. diced cooked turkey
- 6 Tbs. butter
- 3 Tbs. flour
- 1/2 tsp. salt
- 1 – 1 1/2 tsp. curry powder
- 1 1/2 C. turkey stock, mixed with a little cream
Directions
Sauté mushrooms, onion, apple, and turkey in butter until apple and onion are tender. Remove from heat and stir in flour, salt, and curry powder. Blend in ½ C. liquid and return to stove. Cook, stirring and gradually adding remaining 1 C. liquid, over medium heat until sauce has thickened. Put in top of double boiler and cook over boiling water 15 minutes longer. Taste to adjust seasoning. Serve with hot rice.
