This is a hearty, tummy-warming turkey soup with a Mexican kick.

Ingredients

  • 1 lb. ground turkey
  • 1 pkg. McCormick Tex Mex Chili Mix
  • 1 lg. can Rotel tomatoes
  • 1 sm. can black beans
  • 1 pkg. frozen vegetable mix (chopped onions, red and green peppers)
  • 1 C. bite-size pieces zucchini
  • 1 C. bite-sized pieces eggplant
  • garlic to taste
  • 1 14-oz. pkg. Mexican style shredded cheese
  • flour tortillas for serving if desired

Directions

In a large saucepan, brown turkey in olive oil. Add favorite spices – garlic, salt, pepper, etc. Add large can of Rotel tomatoes (with chili peppers and spices). Add the can of black beans including liquid in can. Add half package of chopped onions, red and green chopped peppers. Add the McCormick Tex Mex chili mix. Cook all ingredients over medium heat until cooked through.

Add the zucchini and eggplant and allow to simmer covered for 10 minutes or until eggplant and zucchini are soft. Add the whole package of Mexican shredded cheese and cover and simmer until cheese is melted and incorporated. You can add some fresh herbs (such as thyme) here too if desired. Can be served in a bowl as chili or rolled into a warm flour tortilla.
