Turkey, Lentil And Orzo Soup With Turnips
Ingredients
- 2 qt. turkey broth or chicken broth
- 1 C. leeks, chopped
- 1 C. celery, chopped
- 3 C. turkey, cooked and diced
- 1/2 C. lentils (any variety), washed and sorted
- 1/2 C. orzo
- 1/2 tsp. dried oregano leaves,crushed
- 1 clove garlic, minced
- 1/2 tsp. season salt
Directions
Place all ingredients in a 4-qt. saucepan and heat to boiling, then turn down to medium heat and simmer for 30 minutes or until vegetables are tender. Add salt and pepper if needed. Serve with seasoned croutons or crackers.
