Turkey Meatloaf with Sun-Dried Tomatoes

Skip the traditional meatloaf and try this amazing take on an old favorite! Try it cold or thinly sliced for a picnic!

  • 1 lb. ground turkey
  • 1 med. onion, chopped
  • 1 C. fresh bread crumbs
  • 1 egg, beaten
  • 1/2 C. pine nuts, toasted
  • 12 sun-dried, oil-packed tomatoes, drained and chopped
  • 1/3 C. milk
  • 2 tsp. fresh rosemary, chopped
  • 2 tsp. fresh oregano, chopped
  • pepper, to taste
  • salt, optional

Preheat oven to 350 degrees.  Combine all ingredients in a large bowl. Mix well.  Transfer mixture to an 8x4 inch loaf pan.  Bake about 50 minutes until loaf pulls away form the side of the pan and the the top is golden brown.

Serve with: Mixed Greens with Hearts of Palm
