Stuffed peppers are a much loved dinner, but the filling can easily get out of control in the calorie department. This recipe uses healthy ingredients to keep the calories under 500, but it doesn’t sacrifice taste.

  • 6 bell peppers, halved
  • 2 C. cooked brown rice
  • 1 lb. ground turkey
  • 2 cloves garlic, diced
  • 1 onion, diced
  • 8 oz. tomato sauce
  • ¼ C. parmesan cheese, shredded

Over medium heat, cook the turkey, onion, and garlic until turkey is browned and cooked through. Stir and crumble turkey while cooking. Combine the turkey mixture with the tomato sauce and rice. Cut the peppers in half and stuff with the rice and turkey mixture. Bake for about 1 hour or until peppers are soft. While still hot, sprinkle with cheese.
