Turkey Vegetable Bean Soup
Ingredients
- 32 oz. roasted red pepper and tomato soup
- 1 lg. onion, chopped
- 1 yellow pepper, chopped
- 2 cloves garlic, minced
- Italian seasoning to taste
- garlic powder to taste
- 2 C. black beans
- 2.5 lb. ground turkey
- 1 lb. frozen mixed vegtables
- shredded cheese (optional)
- sour cream (optional)
Directions
Brown turkey with half of chopped onion and minced garlic. Drain and put in 6-qt. crockpot. Add rest of ingredients mix well, and cook on low for 6-8 hrs or high 3-4 hrs. Top with shredded cheese & sour cream if desired.
