This classic Turkish recipe resembles pizza, but instead tops its dough with a savory beef and vegetable filling. Try this dish to enjoy a savory lunch or serve it as an appetizer at your next get-together.

  • Dough:
  • 1 Tbs instant dry yeast
  • 1 C warm water
  • 1 tsp sugar
  • 1 tsp salt
  • 3 Tbs vegetable oil
  • 3 C flour
  • Filling:
  • 1 -2 Tbs olive oil
  • 2 chopped medium onions
  • 4 chopped garlic cloves
  • 10 oz ground beef
  • 1⁄2 tsp ground cumin
  • 1⁄2 tsp ground coriander
  • salt and pepper
  • 1 C chopped tomato
  • 1⁄4 C chopped fresh curly-leaf parsley
  • 3 Tbs chopped fresh mint

Mix dough ingredients and knead until smooth. Grease the resulting dough with oil, cover, let rise for 30 minutes, knead further, then re-cover and let rise for about one hour.

To prepare the filling, first heat oil in a large skillet, then add chopped onions and garlic, sautéing until translucent. Add ground meat, cumin, coriander, salt and pepper, then saute for 5 minutes. Add tomatoes to skillet and cook until their water is absorbed.

Remove from heat, cool and add parsley and mint. Preheat oven to 400º.
On a floured surface, roll dough into large rectangular oval, then transfer to a baking sheet.

Spread beef filling over the dough and fold the dough's edges over, pinching to seal them together.

Bake in oven for 15 minutes or until golden. Remove and serve.
