  • Crust:
  • 1 C. crushed Oreo cookies
  • 1/4 C. sugar
  • 6 Tbsp. butter, melted
  • Sauce and Filling:
  • 3/4 C. brown sugar
  • 3/4 C. heavy whipping cream
  • 3 Tbsp. corn syrup
  • 3 Tbsp. butter
  • 1/2 tsp. vanilla extract
  • 1/2 tsp. salt
  • 2 pt. vanilla ice cream, divided
  • 1 C. whipped topping
  • 2 Tbsp. chopped chocolate
  • 2 Tbsp. crushed Heath bars
  • chocolate sauce, for topping

Preheat the oven to 350 degrees. Mix the cookie crumbs and sugar. Drizzle the butter on top and blend until moistened. Press the mixture into a cake or pie tin. Bake about 12 minutes until firm. Cool completely and freeze for at least 1 hour. Meanwhile, make the sauce by bringing the brown sugar, whipping cream, and corn syrup to a boil in saucepan. Boil 5 minutes while stirring. Turn off the heat and whisk in the butter, vanilla, and salt. Cool completely. Soften the ice cream in the microwave and spread into the frozen pie crust. Spread 1/4 cup caramel over the pie and freeze another hour. Repeat with the rest of the ice cream in 3 layers. Freeze the pie overnight and reserve the extra caramel. Top the cake with whipped topping, chopped chocolate, Health bars, chocolate sauce, and caramel before serving.
