  • 2 artichokes
  • 2 Tbs. flour
  • 3 Tbs. olive oil
  • 4 eggs, lightly beaten with a fork
  • 1/4 tsp. salt
  • 1/8 tsp. pepper

Cut out leaves off artichokes. Cut in half and remove chokes. Slice lengthwise in very thin slices. Flour slices and fry in olive oil until crisp. When crisp, add eggs (already beaten and mixed with salt and pepper). Continue frying for 12 minutes on each side.
