Tuscan Sauce

Ingredients
- 4 Tbs. olive oil
- 1 med. onion, finely chopped
- 1/2 C. chopped carrot
- 1/4 C. chopped celery
- 1 sm. garlic clove, minced
- 3 lbs. plum tomatoes, peeled, seeded and finely chopped
- 1/2 C. chicken broth
- pinch crushed red pepper
- salt
- 2 basil leaves, torn
Directions
Pour the oil into a medium saucepan. Add the onion, carrot, celery and garlic. Cook over medium heat, stirring, until vegetables are tender and golden. Should take 15 minutes. Stir in the tomatoes, broth, red pepper and salt to taste. Bring to a simmer. Cover the pan partially and cook over low heat for about 30 minutes. Stir occasionally. Stir in basil. Serve hot.
