  • 6 baking potatoes
  • 1 stick butter
  • 6 strips bacon, crumbled
  • 1 T. olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 C. mushrooms, sliced
  • ½ C. milk
  • 1 egg
  • Salt and pepper to taste
  • 1 C. cheddar cheese, shredded

Preheat oven to 400 degrees. Pierce potatoes with a fork and place them onto a baking sheet. Bake for 45 minutes until tender. In a skillet, heat oil and sauté onions, garlic, and mushrooms until fragrant and softened. When potatoes have cooled slightly, slice a bit off of the top of each and scoop of the flesh into a bowl. Combine the flesh with butter, sautéed mixture, bacon, milk, eggs, salt, and pepper. Spoon filling back into potatoes. Place potatoes in a baking dish, cover with cheese, and bake for 20 minutes until heated through.
