  • 6 russet potatoes
  • 5 tbsp. margarine
  • 1 lb. lean ground beef
  • 1 onion, chopped
  • 1 packet taco seasoning
  • 1 can kidney beans, cleaned and drained
  • 1 tomato, diced
  • 2 cups cheddar cheese, shredded
  • 1 cup mozzarella, shredded
  • Cooking oil

Preheat oven to 400 degrees. Lightly grease a baking pan with cooking oil and place potatoes. Toss in oven for 45 minutes
While potatoes are baking, lightly grease a pan and add beef, onions, cheddar cheese, tomatoes and beans. Season the veggies and meat with taco seasoning. Cook for about 5 minutes
When potatoes are done, slice in half and scoop out some of the insides (potatoes will be hot so use caution)
Place chili mixture into the potatoes and top with mozzarella
Re-grease the baking dish and place the potatoes in the oven for about 15 more minutes (or until cheese has melted)
