  • ¾ C. cheddar cheese
  • ¼ C. green onions, chopped
  • 1 C. sour cream
  • 2 T. butter
  • Salt
  • Pepper

Preheat the oven to 350 degrees. Boil the potatoes. Meanwhile, grease 4 mini casserole dishes with cooking spray. Drain the potatoes and mash them. Add in the cheddar cheese, green onions, sour cream and butter. Add in a dash of salt and pepper. Divide the mixture into the 4 mini casserole dishes. Place into oven for 15 minutes. Serve and enjoy.
