Twice Baked Potato Casserole

This recipe came about because my daughter loves twice baked potatoes.  I was making them one day, and the peeling kept breaking apart, making it hard to stuff the filling in.  I decided to throw it all in a casserole, and it is now one of our favorites.

Ingredients

  • 6 lg. baking potatoes, baked in the oven until soft to the touch
  • 1 stick real butter
  • 1 C. sour cream
  • 1 C. shredded sharp cheese
  • 6 slices bacon, fried until crisp
  • salt and pepper to taste

Directions

Let potatoes cool, then peel and place in large mixing bowl.  Add rest of ingredients, using half of bacon.  Blend together, and place in a baking dish sprayed with Pam.  Sprinkle the rest of the bacon on top, and top with additional shredded cheese.  Bake at 350 degrees until hot and bubbly.

  • This was "awesome!" I took it to a wake and everyone there, including the men, were asking who made it. Everyone wanted the recipe. I used Red Potatoes, added some Garlic Pepper and more Bacon pieces. Can't wait to make it again.

  • This was the best potato casserole I've ever had. I used yukon gold potatoes, left the skins on them and just diced them before mixing in the rest of the ingredients. My husband even made me give his mom the recipe!

  • Just made this recipe for a Memorial Day cookout. I skipped the bacon because there were a few vegetarians in the group. It was a huge hit!
