Once a month, my mom chairs a fundraiser dinner for the local American Legion Post. The proceeds benefit their building fund and veteran's projects. To save time on preparation, this recipe is prepared the day before and refrigerated before baking.

  • 6 large potatoes, cooked
  • 1 - 6 oz. cream cheese
  • 1/4 tsp. pepper
  • 3/4 tsp. salt
  • 2/3 C. sour cream
  • 2 Tbs. vegetable oil
  • 1/4 C. milk

Mash the potatoes adding the milk and rest of ingredients. Put into baking dish and refrigerate overnight. Bake at 350 degrees for 30 minutes until warm and ready to serve.
