Tzatziki
Ingredients
- 1 cucumber, peeled and grated
- 2 C. Greek-style yogurt
- 3 Tbs. olive oil
- 3 cloves crushed garlic
- Dash of vinegar
- Salt, to taste
Directions
Squeeze all liquid from grated cucumber. Allow to drain for a few minutes. If Greek-style yogurt is not available, substitute whole-fat plain yogurt and allow it to drain to remove as much excess liquid as possible. Mix all ingredients together lightly.
Serves 4 as an appetizer.
