Tzimmes
Ingredients
- 1 lb. carrots, cut into 1-inch pieces
- 6 med. sweet potatoes
- 1 lb. flanken or short ribs
- 12 oz. pitted prunes
- 1 C. orange juice
- 1/2 C. honey
Directions
Peel potatoes and cube. Place in a Dutch oven with carrots. Cut meat into about 1 1/2-inch pieces. Cover potatoes with meat. Place prunes over meat. Add honey and orange juice. Add water until all ingredients are covered. Bake covered at 350 degrees for 1 hour. Remove cover and bake 2-3 hours more unitl meat is done.
