  • 2 cloves garlic, minced
  • 1 tsp. oregano
  • Salt and pepper to taste
  • 6 T. olive oil
  • 8 red potatoes, peeled and chopped
  • 1 C. mushrooms, sliced
  • 1 zucchini, sliced
  • ½ green bell pepper, chopped
  • 1 tomato, chopped
  • ½ C. black olives
  • 1 C. feta, crumbled
  • 2 T. lemon juice

In a skillet, heat oil and sauté garlic with oregano, salt, and pepper. Add in potatoes, mushrooms, zucchini, green pepper, and tomato. Cover and heat for 5 minutes. Stir in black olives and lemon juice, cover again, and cook for 15 minutes, stirring occasionally, until tender. Remove from heat, toss in feta, and serve.
